  • TWT$ Cheesy Squash

    4 yellow squash sliced and diced 1in chunks
    4 zuchinis sliced and diced 1in chunks
    garlic pod diced
    1 large yellow onion diced
    1 box fresh sliced mushrooms
    canola oil & butter
    2 cans cream of mushroom soup
    1 pint sour cream
    grated cheddar cheese

    heat oil & butter in skillet
    saute garlic, squash, musrooms & onions in skillet with Tony C's, italian seasoning and black pepper
    mix the the soup and sour cream in a bowl
    add to the skillet and heat for 5 minutes
    pour into baking dish dish and coverr with cheese
    put in oven at 350 til chees melts

  • Pasole Soup

    3 TBS. vegetable oil
    2 med. onions chopped
    3 cloves garlic, minced
    3 lbs cooked chicken or pork or polish sausage
    4 (15 oz.) cans white or yellow hominy, drained
    2 cups water
    2 cups chicken stock
    1 (4 oz) can taco sauce
    1 (16 oz) can diced tomato with green chilis
    1 bay leaf
    1 tsp salt
    1 tsp cumin
    1 tsp black pepper
    2 (4 oz) cans diced green chilies, undrained
    1/2 tsp oregano
    1 (10 oz) can red enchilada sauce, hot or mild

    Heat oil in skillet, add onions and garlic. Cook untill onions are clear.
    Add onions to chopped cooked meat choice in a large pot and bring to medium heat.
    Stir hominy and 2 cups water and 2 cups chicken stock into pot.
    Add chilis, enchilada sauce, tomatoes, taco sauce, bay leaf, salt, cumin, pepper and oregano. Cook over low to medium hear 2 hours stirring occassionally.
    After 2 hours add more water if needed.
    Adjust seasoning if desired and simmer 2 to 3 hours longer.

  • German Meatballs

    1 pkg Bens butter garlic flavor microwave rice cooked

    In a bowl add:
    1 1/2 lb ground beef
    1 onion chopped
    1 bell pepper chopped
    1 clove of garlic chopped
    2 eggs
    1 teaspoon each salt, pepper
    packet of the cooked rice

    mix ingredients by hand until fully combined
    shape into into oblong meatballs
    coat well with the bread crumbs
    bake in 9 x 13 greased baking dish for 20 minutes at 375
    remove from oven and set aside

    while meatballs are baking
    heat 1/2 stick butter and 1/4 cup oil in a skillet
    add to skillet
    1 cup chopped onion
    1 cup grated carrot
    1/2 cup chopped celery
    2 cloves of garlic chopped
    cover and cook for 5 minutes

    in a bowl
    completely mix 1 cup sour cream with 1 cup of water, salt & pepper
    add to skillett and heat mixture another 5 minutes
    pour mixture over the cooked meat balls
    cover with grated cheese of choice (colby jack works well)
    bake for another 30 minutes at 375

    serve with steamed asparagus

  • Tortellini Stew

    1 lrg package frozen tortellini cooked & drained
    1 pkg spicy Italian sausage skinned chopped into pieces
    1 onion chopped
    1 lrg can Italian tomatoes
    1 pkg frozen spinach
    Garlic salt
    black pepper
    Italian Seasoning
    grated mozzarella cheese
    I box chicken stock

    Brown sausage
    Add onions and sauté
    Add chicken stock and heat
    Add Italian tomatoes, frozen spinach and seasonings
    Heat to low boil
    Add cooked tortellini
    Cover and simmer for 30 minutes
    Serve with grated cheese

  • Red roasted Potatoes

    Slice red skin potatoes into wedges
    In a large bowl add melted bacon fat, bacon & chive seasoning, salt & pepper, onion powder
    Toss potato wedges in mixture until coated
    Spread on cookie sheets and bake in preheated oven at 400 for 40 minutes
    Turn over after 20 mins on each side

  • Italian Skillet Squash

    Slice yellow squash, zuchinni, onion
    crush 2 garlic cloves
    in olive oil add salt pepper italian seasoning basil oregano
    mix squash zuchinni garlic onion in oil & spices until coated
    heat olive oil in a skillet and saute until tender.

  • Stuffed Sausage Shells

    8 oz italian sausage
    1 lb frozen mixed pepper stir fry (thawed & drained)
    1 24 oz jar spagetti sauce
    1 lb ground beef
    shreded mozzarella
    1 pkg jumbo shells
    oregano
    garlic powder
    bay leaf
    salt
    pepper
    1/2 cup water

    cook and drain pasta shells
    preheat oven to 350
    remove skin from sausage & brown in a skillet set aside to cool
    mix 1 1/2 cups mozarella with sausage after cool
    in another skillet saute stir fry peppers
    add ground beef
    season with spices & brown
    spray baking dish with pam
    cover bottom of baking dish with sauce
    stuff shels with sausage and mozzarella
    lay shells in baking dish & cover with remaining sauce
    bake covered for 40 min
    remove cover and spred mozarella over top
    replace in oven to melt chees about 5 mins

  • Baked Chicken Breasts

    Boneless, skinless chicken breasts
    milk
    2 dry hidden valley ranch dressing
    salt & pepper
    1 box Panco coating mix
    Pam Spray

    In a large bowl cover and soak boneless, skinless chicken breasts in sweetmilk in the fridge for about an hour
    Mix 1 box panco bread coating, 2 packages dry hidden valley ranch dressing, salt and pepper in another large bowl
    Turn chicken breast in the coating until fully coated on each side
    Spray flat baking sheet with pam
    Place chicken on baking sheet and place in oven preheated to 375 and bake for 20 minutes
    Turn chicken over on baking sheet and bake for another 20 minutes.
    Cut chicken with a knife to make sure it is completly cooked.

  • Tequila Chipolte Jerky

    1 cup cold water
    1 cup soy sauce
    1 cup tequila
    1/2 cup honey
    1 tablespoon onion powder
    1 tablespoon black pepper
    1 tablespoon garlic salt
    1 can chipolte peppers in adobo sauce
    1 lime sliced in 1/8th in rings with peel on
    3 lbs of sliced beef

    Put water, sliced limes, and can of chipolte in a blender (I use a Ninja) and blend until completely liquified.
    Put soy sauce and tequila in a large bowl.
    Using a wisk, blend in the honey, spices, and the mixture from blender.
    Add sliced beef and make sure the meat is all covered completely in the marinade.
    Cover bowl and place in fridge overnight. Dry the beef until it turns to jerky.
    I use a dehydrator bought at Academy Sports but you can use an oven at low heat.
    Just make sure air can circulate around the meat.

  • Garlic butter shrimp

    Ingredients

    30-35 large shrimp
    1 teaspoon lemon pepper
    1 teaspoon creole seasoning
    1 teaspoon paprika
    1 teaspoon old bay seasoning
    1 stick unsalted butter
    1 teaspoon ground black pepper
    2 tablespoons minced garlic
    chopped fresh parsley
    4 tablespoons cornstarch
    juice from squezed lemon

    mix spices together in a bowl
    coat shrimp with spices
    add corn starch and fold onto shrimp covering each one well
    in a hot skillet add oil and 1 stick unsalted butter
    after butter has melted squeeze in lemon juice
    layer shrimp in skillet and cook 2 minutes on a side
    add more lemon juice, butter and oil as necessary and continue cooking all shrimp
    remove shrimp from skillet
    add more butter to skillet
    add garlic and parsley to skillet and cook til tender
    return srimp to skillet and baste well in the mixture

    In a pot add 3 cans of Tomatoes-Okra-Corn mix
    and 3 packets of Bens microwave butter garlic rice
    heat and serve with the shrimp

  • Betsy's Breakfast casserole

    Ingredients

    1 lb hot bfast sausage browned
    10 eggs beaten
    2 cups half n half
    1 cup milk
    tsp salt
    tsp pepper
    1 bunch green onions chopped
    tsp dry mustard
    3 cups cubed french bread (i inch cubes)
    half cup cheddar
    half cup monterey jack

    Put bread cubes, cheese and sausage in 9 x 13 greased baking dish
    Combine all other ingredients and pour on top of the baking dish
    Cover and let sit overnite in fridge
    Bake for 1 hour at 350

  • Fiesta Casserole

    Ingredients

    1 lb ground beef
    1 lb raw shrimp
    1 large onion chopped
    1 cup red & green bell peppers
    1 pkg dry taco seasoning
    2 tblsp 2gringos/roasted garlic/dry ranch dressing mix
    5 cups diced and peeled potatoes
    2 tlbs oil
    half stick of butter
    5 cups sliced zucchini (optional)
    14 oz can drained diced tomatoes
    1 can drained tomatoes & green chilies
    2 cups grated taco chees blend
    1 cup original fritos

    Add oil to a skillet over med heat
    Brown ground beef, peppers & onions in skillet
    Remove from skillet and set aside leaving the oil
    Add the butter to the skillet and melt
    Add taco seasoning to the skillet and stir
    add shrimp & cook 5 minutes turning over once
    Remove shrimp and add to the browned hamburger
    Add more oil to skillet if needed
    Add potatoes and 2 gringos mix and brown
    Add zucchini and cook til beginning to soften
    Spread the beef and shrimp into a 9 x 13 baking dish
    Spread the potatoes and zuchini over the beef and shrimp
    Top with
    tomatoes and green chilies combined
    fritos
    grated cheese
    Bake til cheese is bubbly about 2o minutes at 350

  • Taco Soup

    Ingredients

    1 lb hamburger meat
    1 onion chopped
    1 pkg dry Taco Seasoning
    1 pkg Hidden Valley Ranch dry mix
    salt and pepper
    2 cups beef broth
    1 can whole kernel corn
    1 can stewed tomatoes
    1 can pinto beans
    1 can black beans
    1 can white hominy
    1 sml can toms n green chilies
    (Do not drain canned veggies)

    Brown meat in a skillet with seasonings
    Add chopped onion and saute til tender
    Put ingredients into large pot and bring to a boil
    Reduce heat and simmer for about an hour

  • Dons Wings

    Ingredients

    Wings and drumbies
    Canola oil spray
    2 gringos spices mixture

    Spread wings and drumbies out on a large cookie sheet
    Spray with canola
    Coat with 2 gringos mixture
    turn over
    repeat
    Bake at 350 for 30 minutes
    turn over
    Bake for another 30 minutes
